I’ve worked with Purslane many times over the years. Okay, okay “work with” is not quite accurate, as I tend to head out after the wedding ceremony just as they are getting going. But I have had the opportunity to try their delicious food at industry events, and I appreciate their dedication to the environment and use of fresh, local ingredients. I recently spoke with Sales Director, Kendra Thalman and I’d love to shine the spotlight on their wonderful team. Without further ado, here’s more from Kendra at PURSLANE!

What was the path that led you to start catering?

Honestly, the insane demand for our style of delicious, local food practiced in our restaurants - Rucola, June Wine Bar, and Rhodora! When we realized we had the opportunity to expand our food ethos, and extend our commitment to zero-waste and sustainability to traditionally one of the most wasteful spaces (events and catering), we knew we had to give it a try.

What excites you about weddings?

Weddings represent one of the most important milestones in people's lives. Being able to provide a seamless culinary experience that not only reflects the unique nature of each couple but also elevates their event. This is the ultimate expression of our commitment to hospitality and service.

What do you look for in a couple?

We love every couple we work with. Truly. The couples that tend to work with us are genuine, have a love of great food, a love of each other, and often a love of the Earth! 

What is the greatest compliment you’ve ever received?

The outpouring of community support during the current pandemic has been particularly meaningful. Though our events have certainly been reduced in size, we continue to receive emails and calls from our clients. They thank us for providing an experience that allows them and their guests to simply enjoy each other's company and time, without worry.

What do you desire for your business?

We are so proud of all that we've accomplished over the past five years of business. Over the next five, we hope to bring our unique brand of zero-waste catering to a broader audience, encouraging our guests to have an amazing culinary experience, while joining us in the fight against climate change.

What are you grateful for?

Right now, we are feeling grateful for our team and our community. This is an extremely difficult time in our country, and within this industry in particular. However, we have an amazing team committed to the work and to our mission. We also have an amazing community who continues to champion and support not only our food, but a commitment to sustainability.

Any recent cause for celebration or a recent victory?

We are in the process of launching the very first zero-waste meal service. Aron Cutuc, our Executive Chef has created some really wonderful menus. Subscribers will be able to order lunch and dinner from us from one to five days a week. All meals will arrive in reusable metal tiffins, which we'll pick up at your next delivery. We'll collect your compost too!
