Gratituesday 4.22.25 - Celebrating the Earth
Happy Earth Day, everyone! I started my day going to a potluck breakfast as part of Creative Mornings. We were supposed to bring something from our culture (but I missed that part) and being mindful about packaging. There were lots of breads, fresh fruit and cheese. The host (who is a cookbook author) made carrot lox and cashew cheese that was super interesting and tasty.
I originally wanted to make something with veggies, but since I’m out of eggs I couldn’t make a frittata. However, I did have a full container of yogurt and could quickly make some fresh muesli. I transferred both into glass containers and headed to Brooklyn. Glass containers are stinkin’ heavy and unfortunately people didn’t eat my yogurt or muesli, so I had to carry the full containers back home.
We ended our gathering sharing things we already do for the environment and some intentions for the year ahead. Lots of sharing around food and shopping, as well as journaling about actions. There was inspiration and failures, but most of all there was community. And while it was an early start and a long journey, it was a great way to start the day and celebrate the Earth.
